Cabernet Sauvignon

    • Geographical distribution
    • This French-originated red winegrape is cultivated all over the world, and is present in virtually every winegrowing region of Spain with the exception of Galicia and Asturias. Castilla La-Mancha is the main producing region, with a growing surface of ca. 7.000 ha, followed closely by Aragon and Catalonia with 4.000 and 3.000 ha, respectively.


    • Agronomic features
    • Cabernet-Sauvignon is a susceptible variety to the eutypa dieback diseases, produced by Eutypa lata fungi, esca (Stereum hirsutum and Phellinus igniarius) as well as insects such as cicadellides and mites. On the other hand this is a variety resistant to the excoriose (Phomopsis viticola) and botytris (Botryotinia fuckeliana) diseases. Cabernet-Sauvignon does not develop well with extreme droughts during ripening, but when budbrake occurs late, it resists the spring frost well. Besides, it is wind resistant and is not sensitive to landslides.

    • Oenological features
    • The Cabernet-Sauvignon presents an interesting tannic structure, with musts of dark red and violet colors. The young wines show intense redcurrant aromas with flavor notes of green pepper and a fruity touch to cherries and prunes. It is suitable to ageing in oak barrel. Monovarietal Cabernet-Sauvignon wines can lack smoothness.
