Pedro Ximénez

    • Geographical distribution
    • White vine variety traditionally cultivated in the winegrowing regions of Andalusia and Extremadura, though currently it is also observed in Catalonia, Castilla La-Mancha, Comunidad Valenciana and Murcia. Its production is important in the DO Montilla-Moriles where it is considered preferential white grape.


    • Agronomic features
    • Pedro Ximénez grapes are sensitive to the botritys (Botrytis cinerea) and the downy mildew (Plasmopara viticola). It is somewhat less sensitive to the oïdium (Uncinula necator), esca (Stereum hirsutum and Phellinus igniarius), eutypa dieback (Eutypa lata) and termites. It is moderately resistant to cold and wind.

    • Date of budbreak: medium
    • Date of maturity: medium


    • Oenological features
    • It produces highly alcoholic musts with low acidity. They are appropriate for biological ageing. After the berries are dried, musts can reach between 30-32° Baumé, needed to produce Pedro Ximénez wines, which are very sweet with fruity and floral aromas.
